Ingredients

  • Dark Cracked Wheat 1 Cup (soak in 1 cup water)
  • 1 tsp salt
  • 3 bunches parsley
  • 2 bunches scallions, finely chopped (optional)
  • 3 small tomatoes chopped fine
  • 1/3 cup olive oil
  • 1/3 + cup fresh squeezed lemon juice

Instructions

  1. Soak Cracked wheat in salted water (Set aside for last ingredient added.)
  2. Rinse parsley in water with the sea salt for a few minutes. Cut off best tops and chop (use pulse on your food processor) parsley.
  3. Chop scallions, and tomatoes, add olive oil and lemon juice. Then stir in parsley and cracked wheat.
  4. Mix gently. Wait at least 2 hours before serving (refrigerate).
  5. Fresh mint may be sprinkled on top just before serving.
