Ingredients
- Dark Cracked Wheat 1 Cup (soak in 1 cup water)
- 1 tsp salt
- 3 bunches parsley
- 2 bunches scallions, finely chopped (optional)
- 3 small tomatoes chopped fine
- 1/3 cup olive oil
- 1/3 + cup fresh squeezed lemon juice
Instructions
- Soak Cracked wheat in salted water (Set aside for last ingredient added.)
- Rinse parsley in water with the sea salt for a few minutes. Cut off best tops and chop (use pulse on your food processor) parsley.
- Chop scallions, and tomatoes, add olive oil and lemon juice. Then stir in parsley and cracked wheat.
- Mix gently. Wait at least 2 hours before serving (refrigerate).
- Fresh mint may be sprinkled on top just before serving.
