Ingredients

  • Boneless chicken breasts,halved (skin-on)
  • 1 oz. goat cheese or feta cheese
  • 1 cup seasoned bread crumbs
  • 3 Tbs pesto
  • 2 roasted red bell peppers, peeled
  • Drippings from baked chicken

Instructions

  1. Mix cheese and breadcrumbs. Stuff one tablespoon in each chicken breast.
  2. Baste with pesto and bake at 375 degrees until crispy. Broil to brown.
  3. In a blender puree peppers and drippings. Serve with chicken
