Ingredients
- Boneless chicken breasts,halved (skin-on)
- 1 oz. goat cheese or feta cheese
- 1 cup seasoned bread crumbs
- 3 Tbs pesto
- 2 roasted red bell peppers, peeled
- Drippings from baked chicken
Instructions
- Mix cheese and breadcrumbs. Stuff one tablespoon in each chicken breast.
- Baste with pesto and bake at 375 degrees until crispy. Broil to brown.
- In a blender puree peppers and drippings. Serve with chicken
