Ingredients

  • 5 eggs beaten
  • 1 cup of milk
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/4 tsp Tabasco
  • 1 1lb can salmon (Jenet uses fresh salmon…it’s succulent! and doesn’t need to be drained!)
  • 1 cup grated Swiss cheese
  • 1 cup grated cheddar cheese
  • 2 Tbs minced green onion tops
  • 1 9-inch unbaked pastry shell

Instructions

  1. Combine eggs, milk, salt, pepper, and Tabasco.
  2. Put salmon in glass dish with 1/3 cup of water, cover, and microwave for 4-5 minutes. Cool before adding to egg mixture (you don’t want them to scramble!)
  3. Stir in salmon, cheese, and onion tops.
  4. Pour into pastry shell and bake in a preheated 375 degree oven for 45-50 minutes or until set in center.
  5. Serve hot! The pastry shell is optional, easily replaced with a glass baking dish!
