Ingredients
- 5 eggs beaten
- 1 cup of milk
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/4 tsp Tabasco
- 1 1lb can salmon (Jenet uses fresh salmon…it’s succulent! and doesn’t need to be drained!)
- 1 cup grated Swiss cheese
- 1 cup grated cheddar cheese
- 2 Tbs minced green onion tops
- 1 9-inch unbaked pastry shell
Instructions
- Combine eggs, milk, salt, pepper, and Tabasco.
- Put salmon in glass dish with 1/3 cup of water, cover, and microwave for 4-5 minutes. Cool before adding to egg mixture (you don’t want them to scramble!)
- Stir in salmon, cheese, and onion tops.
- Pour into pastry shell and bake in a preheated 375 degree oven for 45-50 minutes or until set in center.
- Serve hot! The pastry shell is optional, easily replaced with a glass baking dish!
