Ingredients

  • 8 oz. (2 1/2 cups) rotini pasta
  • 4 cups hot water (including 1 tsp. oil and 1 tsp. salt)
  • 2 cups sliced cauliflower
  • 2 cups broccoli pieces
  • 1/2 cup thinly sliced carrots
  • 1 tomato chopped
  • 1/2 cup sliced ripe olives
  • 1 1/2 cups reduced calorie Italian dressing
  • 1/2 tsp salt

Instructions

  1. Combine rotini, water (with salt and olive oil) in a 2 quart glass bowl
  2. Microwave uncovered for 10-12 minutes until pasta is tender.
  3. Drain. Rinse in cold water. Set aside.
  4. Combine cauliflower, broccoli, and carrots. Cover and microwave for 3 1/2- 4 minutes until tender (yet still slightly crisp).
  5. Drain veggies and allow to cool slightly.
  6. Combine pasta, veggies, chopped tomato, olives, salad dressing, and salt.
  7. Cover and refrigerate for several hours or overnight.

Yields 8 servings
