Ingredients
- 8 oz. (2 1/2 cups) rotini pasta
- 4 cups hot water (including 1 tsp. oil and 1 tsp. salt)
- 2 cups sliced cauliflower
- 2 cups broccoli pieces
- 1/2 cup thinly sliced carrots
- 1 tomato chopped
- 1/2 cup sliced ripe olives
- 1 1/2 cups reduced calorie Italian dressing
- 1/2 tsp salt
Instructions
- Combine rotini, water (with salt and olive oil) in a 2 quart glass bowl
- Microwave uncovered for 10-12 minutes until pasta is tender.
- Drain. Rinse in cold water. Set aside.
- Combine cauliflower, broccoli, and carrots. Cover and microwave for 3 1/2- 4 minutes until tender (yet still slightly crisp).
- Drain veggies and allow to cool slightly.
- Combine pasta, veggies, chopped tomato, olives, salad dressing, and salt.
- Cover and refrigerate for several hours or overnight.
Yields 8 servings
