Ingredients

  • Eggplant (or zucchini)
  • 2 cups milk (for dipping)
  • 2 eggs (for dipping)
  • 2 cups flour (whole wheat if desired)
  • 2 cups whole wheat bread crumbs (if desired)
  • 2 Tbs Italian seasong/ garlic powder to taste (mixed with breadcrumb mixture)
  • 3 cups mozzarella cheese,shredded
  • 2 cups parmesan cheese
  • 3 cups Prego (or your own sauce)
  • Cooked sausage (crumbled if desired throughout the layers)

Instructions

  1. Peel and slice eggplant. Mix eggs and milk well.
  2. Dip eggplant into wet mixture and follow by dipping into flour/breadcrumb mixture.
  3. Brown eggplant in oil and drain on paper towels.
  4. Layer sauce, eggplant slices, and cheese.
  5. Microwave for 20+ minutes.

Note: This can be made in big batches and can be easily frozen. When ready to eat, simply remove from freezer, defrost, and microwave for about 20 minutes!
