Ingredients
- Eggplant (or zucchini)
- 2 cups milk (for dipping)
- 2 eggs (for dipping)
- 2 cups flour (whole wheat if desired)
- 2 cups whole wheat bread crumbs (if desired)
- 2 Tbs Italian seasong/ garlic powder to taste (mixed with breadcrumb mixture)
- 3 cups mozzarella cheese,shredded
- 2 cups parmesan cheese
- 3 cups Prego (or your own sauce)
- Cooked sausage (crumbled if desired throughout the layers)
Instructions
- Peel and slice eggplant. Mix eggs and milk well.
- Dip eggplant into wet mixture and follow by dipping into flour/breadcrumb mixture.
- Brown eggplant in oil and drain on paper towels.
- Layer sauce, eggplant slices, and cheese.
- Microwave for 20+ minutes.
Note: This can be made in big batches and can be easily frozen. When ready to eat, simply remove from freezer, defrost, and microwave for about 20 minutes!
