Ingredients

  • 1 stick butter (softened)
  • 1 cup sugar (can safely be replaced with Stevia/sugar substitutes)
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 3/4 cup flour
  • 3- 3 1/2 cups oatmeal
  • 1 cup chopped nuts (walnuts are delicous)
  • 1 1/2 cup raisins or white chocolate chips (or both…there are no rules!)

Instructions

  1. Mix wet ingredients and combine with dry.
  2. Roll the dough into a log using wax paper and chill overnight.
  3. Slice into 1 inch medallions and cook for 10-12 minutes in a 350 degree oven.

Yields 3 dozen cookies.
