Ingredients

  • 1/3 cup fresh orange juice
  • 1/4 cup creamy peanut butter
  • 1 Tbsp. grated ginger (or 1 tsp ground ginger)
  • 1/3 cup soy sauce
  • 2 Tbsp. honey
  • 1/2 cup olive oil
  • 6 boneless skinless chicken breasts
  • 1 1/4 cups finely chopped salted peanuts

Instructions

  1. In a bowl, combine the first six ingredients and mix well.
  2. Cut chicken into 1 1/2 inch pieces.
  3. Reserve 1/4 cup of marinade for basting. Pour marinade over the chicken and refrigerate overnight.
  4. Thread chicken on skewers.
  5. While grilling, brush kabobs with marinade and cook until done.
  6. Sprinkle with peanuts before serving!!
